Ingredients :
- 1 cup wholewheat flour
- 2/3rd tsp baking powder
- 2/3rd tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon powder
- 2 large over ripe bananas mashed
- 4 tbsp oil
- 1/2 cup brown sugar
- 1 egg at room temperature
- 1 tsp vanilla essence
- 2 tbsp milk
- Handful chopped pecans, walnuts or chocolate chips
Method :
- Preheat the oven at 160 degrees centigrade
- Beat bananas, oil,sugar,egg,vanilla essence & milk well with a hand beater till pale and fluffy
- Add salt & cinnamon and beat till well mixed
- Add baking soda and powder and beat once properly
- Add flour and fold gently till just mixed
- Gently fold in any nuts or chocolate chips
- Fill muffin cups 2/3rd and bake for around 20 minutes till done.
Notes:
- For moist muffins, do not over mix once flour has been added
- To check if muffins are baked, insert a toothpick in the centre and if clean your muffins are done
