Banana muffin…healthier version

“My hunt for healthier sweets, led me to these. Uncompromisingly great, moist and yummy, the best version of banana muffin ever…”

Ingredients :

  • 1 cup wholewheat flour
  • 2/3rd tsp baking powder
  • 2/3rd tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon powder
  • 2 large over ripe bananas mashed
  • 4 tbsp oil
  • 1/2 cup brown sugar
  • 1 egg at room temperature
  • 1 tsp vanilla essence
  • 2 tbsp milk
  • Handful chopped pecans, walnuts or chocolate chips

Method :

  1. Preheat the oven at 160 degrees centigrade
  2. Beat bananas, oil,sugar,egg,vanilla essence & milk well with a hand beater till pale and fluffy
  3. Add salt & cinnamon and beat till well mixed
  4. Add baking soda and powder and beat once properly
  5. Add flour and fold gently till just mixed
  6. Gently fold in any nuts or chocolate chips
  7. Fill muffin cups 2/3rd and bake for around 20 minutes till done.

Notes:

  • For moist muffins, do not over mix once flour has been added
  • To check if muffins are baked, insert a toothpick in the centre and if clean your muffins are done
